Ingredients:



2 pounds of cut-up, bone-in chicken
30 minutes of soak time for two cups of basmati rice
Yoghurt, plain, one cup
2 finely sliced onions
sliced tomatoes from 2
2 teaspoons of oil or ghee
1-stick of cinnamon
4 pods of cardamom
(4) cloves
1 bay leaf, 2
1/4 cup cumin seeds
1 teaspoon dried coriander
One-half teaspoon of turmeric powder
0.5 teaspoons of optional red chilli powder
Salt, as desired
Water in 4 glasses
a little amount of chopped cilantro for adornment
Instructions:

Mix the yoghurt, salt, red chilli powder (if using), and turmeric powder in a large bowl. The chicken pieces should then be added and thoroughly marinated. For at least two hours or overnight, marinate the food in the refrigerator with the bowl covered.

Ghee or oil should be heated in a big saucepan over medium heat. Add the bay leaves, cumin seeds, onions, bay leaves, cardamom pods, and cinnamon stick. Onions should be sautéed until they are golden brown and caramelised.


Cook the diced tomatoes after being added until they are pulpy and soft.

Once the chicken is partly done, add the marinated chicken pieces and simmer for a further 5-7 minutes.

Make sure the chicken and spices are well distributed among the rice before adding the soaked basmati rice to the saucepan.

The mixture will boil after being added to 4 cups of water. When the rice and chicken are thoroughly cooked, lower the heat to low, cover the pan, and let the biryani simmer for about 20 minutes.


After the biryani has finished cooking, remove it from the heat and cover it for 5 to 10 minutes.

Serve hot with raita or chutney on the side and garnish with chopped cilantro.
